Console "wood"

What would be the correct way to clean the "wood" in the interior.
Just finish the top and seats but want to know how
to make the plates look like new.

Is it laminate or actual wood? You could just wax it if it's laminate. If it's wood, it would depend on the condition of the clearcoat.

You can try to buff it first to bring back some shine and remove some scratches. Carnuba wax.

What about for the console of a 1984 Pininfarina? The finish is so glossy it's hard to tell what the material is, but I'm looking at a white film over top of the dash that disappears when I wet it (spit), but instantly reappears. No idea what kind of product would fix that - any thoughts?

You may find that the dash finish is a laminate, in which case any household cleaner will be OK and top off with a furniture polish.
The white film could be a result of excessive moisture exposure which has delaminated the top coating and penetrated. If something like this has occurred then possibly a resurfacing will be the only option.

Mine has two type of finishes on the dash and the centre console, but this could be due to the conversion to right hand drive.
