Radiator fan wiring and dealing with loose wires

I have a 1978 fiat spider with emissions equipment removed. This is my first time dealing with electrical in a car, so I'm hoping to learn from forum.

PO said the radiator fan wasn't switching on. He rigged up what looks like a 12v relay you'd get from your local autoparts store, labeled it "Radiator relay", and called it a day. In this configuration, the radiator appears to always run, so I'm not sure what function the relay is taking here. There is also a yellow and brown wire connected together, which PO says is necessarily for the radiator fan to run.

With all the emissions equipment removed, I have a bundle of wires that don't plug into anything anymore. Anything I can do to remove these? They're cluttering the engine bay behind the fender. I know I could just rip it out, but since I don't know what I'm looking at, I don't want to accidentally remove something I needed.

I'd like to restore the radiator fan wiring to OEM setup, but I could use some guidance how to rebuild that harness and fault trace why the radiator fan wasn't turning on. The 2-wire connection to the radiator is still on the car.

I unwrapped the mystery harness to discover that the relay was connected to... itself. The switch was always open. But I already knew that from observation. Not sure why he made the most complicated jumper cable in existence using every color in the rainbow of wire, but oh well.

Also, I pulled the radiator thermo switch and put it under a torch, the switch opened up. Not sure what temp, but the switch definitely works with some heat. Unclear why this switch was bypassed at this time..
