Rear Anti-Sway Bar

Does adding a rear anti-sway bar significantly stiffen the suspension, and cause a harder ride?

It depends on the bar. Some are so stiff that they are quite noticeable and can cause a wheel to lift on uneven roadways.

I put one that was too stiff in a Motorhome and it was like sitting on top of a sailboat mast when encountering and change in the swale of the roadway.

How do you know which one to buy, or are they adjustable?

Most are not adjustable and require you to order the correct diameter bar. Some have two or three holes for the chassis links in the arms of the bars so you could choose between a few levels of sway control. I've not vetted this out on the Spider as I don't want to stress the chassis on and old but fun car to drive that's just about perfect in overall balance as it came delivered.

One could even change to a full anti-lock brake system with traction and stability control but then it would no longer be the Classic Italian Spider Roadster that favored simplicity.
